Ok, so this one isn’t a Christmas gift, obviously. 🙂 But this was a big hit with the husband, so I thought I’d share.
Since last October, Skyler and I have tried to eat a more Paleo diet. I always am trying to find new recipes and dinner ideas that fit mostly with the Paleo standards. (We try to eat about 80% Paleo – no grains, no peanuts, very minimal sugar, lots of meat and lots of green veggies)… So when I found this on Pinterest, I was pretty excited. I knew Skyler would love this recipe!
Of course, I wouldn’t be me without changing the recipe at least to a degree. 😉
Here was my take on it:
-Brown ground beef (we buy beef from my uncle’s farm)
-Chop 1/2 a large yellow onion and throw it in with the ground beef after it’s mostly cooked.
-1/4 cup ketchup (we use organic, no sugar added)
-1/4 cup soy sauce
-4 tsp rice wine vinegar
-1 tbsp of brown sugar
-Add the sauce mixture to the browned ground beef
-Add about a cup of cashews and stir in
-Add chopped chives
-(Optional: I added a bit of our broccoli slaw too!)
-Let it simmer until it it becomes like a sloppy joe sauce
Instead of making it a lettuce wrap, we just piled it on top of spinach and ate it that way. Skyler loved it! (And I did too!) It was a nice add a new dinner recipe that we both enjoy, especially one with just ground beef because we have a ton of it in the freezer to use! 🙂
