Paleo Lifestyle: Spaghetti Squash, Sauce and Meat

I know I’ve told you a few times that we try to follow the Paleo lifestyle for eating…and maybe someday I’ll tell you a little more about what that entails, and our journey to get there. 😉

But for now, I just wanted to share with you another simple dinner idea to help you cut out carbs and add more veggies and protein!

I don’t know if I lived under a rock before, but I had never in my life heard of “Spaghetti Squash” until about a year and a half ago.  Yes, there is such a thing.  And it’s incredible.  And it’s things like this that make me go, “wow God!  You are SO creative!  How did you come up with that?!”

Spaghetti squash is just a big ol’ squash, about the size of a cantaloupe, but a little bigger and more oblong.  After it’s cooked, you can just pull at it with a fork and pieces of squash come out, exactly like a spaghetti noodle.  It’s incredible, really. 

Since we no longer have any pasta in our house {which means no spaghetti!}, I was SO excited about this discovery! 

You simply poke a hole (a couple inches or so) with a knife into the squash, put it in the microwave for 16-20 minutes, take it out (with hot pads!), cut it open with a knife, and then “fork” it out onto your plate.  It will look like this:

We cook up our farm bought ground beef with some mushrooms and onions:

Add sauce to it, put it on top of a heap of the spaghetti squash, throw some green beans on the side:

And enjoy dinner!!  This is one of our favorite no carb, no sugar, Paleo dinners. 🙂
