In case you missed it, my honey turned 26 yesterday. He had school for most of the day, but in the afternoon we made dinner, birthday cake and had his family over for a little celebration of life. 🙂
The few days before his birthday, I asked Skyler what kind of birthday cake he wanted. I asked him about 4 times and each time he said, “I don’t want a birthday cake!” I knew he’d eat something if I made it, so I dug into my files (aka, Pinterest and my bookmarked pages) to look for what kind of cake I could make with what I had on hand!
The only box cake I had was Devil’s Food and I remembered I had made a cake before with pudding mix and sour cream (both of which I already had too). I found the recipe I was thinking of. It’s this:
- 1 (18.25 ounce) package devil’s food cake mix
- 1 (5.9 ounce) package instant chocolate pudding mix
- 1 cup sour cream
- 1 cup vegetable oil
- 4 eggs
- 1/2 cup warm water
- 2 cups semisweet chocolate chips
For the toppings, I melted vanilla almond bark and “drizzled” it on top (although the drizzle didn’t turn out that spectacular looking!). I crushed about 10 peppermint patties and dropped them on top of the melted vanilla bark. The hot melted bark melted the patties a bit and they drizzled down the cake too. 🙂

Overall, it was a pretty delicious cake. It was moist from the sour cream and while it was warm, the melted chocolate chips were awesome. 🙂 I really liked the slight peppermint flavor from the melted patties on top.
I’d make this cake again. 🙂
We had a great birthday dinner (I made mashed yams with cinnamon and dried cranberries on top, broccoli salad, my breaded garlic Parmesan chicken, and a fruit bowl.), dove into our cake, opened presents and enjoyed our time together. 🙂

We had a good day, but now it’s back to the grind of prepping for our first paintball tournament of the 2012 season this weekend! Plus, I’m getting sick. 🙁 Too many LATE (2 am) nights staying up in a row printing membership ID card’s while Zeek was sleeping. Ugh. This mama needs to take some Emergen-C and go back to bed.
