{Almost} Paleo Chocolate Cookies

As I mentioned, my cousin and his family stayed with us for the weekend.  Before they headed off on their roadtrip back to CA, my cousin Justin made some realllly tasty looking cookies for their trip.  He told me the ingredients, but of course I wasn’t smart enough to write them down.

Then a couple days later, I wanted them.  Badly.  So I threw things together from memory (and added a couple extra’s) and crossed my fingers that they would turn out!


Here’s what I went with:
  • 1 cup applesauce
  • 3 mashed bananas
  • 2 cups almond meal
  • 1 1/2 cups oats

(I wasn’t going to add oats, but they seemed like they needed something else to help hold them together.)

  • 1/2 cup peanut butter (that Justin made with JUST peanuts in our food processor)
  • 1/3 cup cocoa powder
  • 1 cup chocolate chips
  • dash of salt
  • dash of cinnamon
  • splash (or two) of vanilla extract

I sprayed down the baking sheets lightly with olive oil cooking spray and spooned dough onto the sheets.  Baked them at 350 degrees for 13-15 minutes each and…

They held together fabulously and are delicious!!  And healthy enough that I don’t feel bad giving Zeek a cookie. πŸ™‚
